We've been following the promising research on the MIND diet. We can't help but notice the prominence of nuts in these guidelines. Here's an easy packable lunch that fits in the MIND guidelines. It includes Balela salad from Trader Joe's and a roasted beet salad with carrots and almonds purchased from a local deli counter. A leafy salad on the side would make this an ideal MIND lunch. If our family schedule allowed, we'd prep this on the weekend and enjoy it all week. Here's to our good health!
